Ciabatta with Strawberries & Goat Cheese
Serves 6 – 8 as an appetizer or 4-6 as a main course
1 Ciabatta, sliced 4 oz. goat cheese 1 pint strawberries, preferably small ones, tops removed and thinly sliced
Marinade 1 Tbsp. balsamic vinegar 1 pinch salt Fresh ground black pepper to taste 1 Tsp. brown sugar 1 Tbsp. basil leaves, thinly sliced
1. Place strawberries in a small bowl. Add marinade ingredients. Let sit for 30 minutes. 2. Toast slices of ciabatta until lighted browned. 3. Spread goat cheese on ciabatta. 4. Layer strawberries on the cheese. 5. Serve.
If you are serving this as a main course, I recommend pairing it with an arugula and red onion salad.
